But there was still one more thing the big man was desperate to tick off the list - reaching 200 senior club games at his beloved Leitchville-Gunbower.
Pollock, 38, reached that milestone on Saturday, and although it was somewhat bittersweet without crowds and with a losing result, he ultimately walked away proud of the achievement.
“After I won premierships in 2017 and 2018 (with Leitchville-Gunbower), my goal was to get 200 senior games at the club,” Pollock said.
“I was lucky enough to achieve that with everything going on with COVID. I was grateful to get that game.”
Chaired off the ground by teammates post-match, Pollock was also honoured by White Hills players who joined the guard of honour.
A Leitchville boy, Pollock started his playing career at his local club as a junior before playing his first senior game at Cohuna.
Further stints at several country football clubs followed before Pollock returned home to Leitchville.
“Growing up there, it's your home club and that's where your loyalty kicks in, and you want to serve your local community,” Pollock said of his return.
Four consecutive grand final appearances from 2015 to 2018 were a highlight for Pollock, who tasted defeat in 2015 and 2016 followed by success in the following two seasons.
With the club now in a rebuilding phase, and despite not winning a game this year, Pollock said it had still been an enjoyable season at the Bombers.
“It's good to see the young guys come through, and if they all hang around — four or five years’ time — they are going to be a strong force,” he said.
Pollock credits his longevity in the game to recovering well between games, particularly after receiving plenty of wear and tear as a ruckman.
“Sundays and Mondays, it's pretty hard to walk, but you try and get yourself right for Saturday,” Pollock said.
“And I don't train as much as I used to. Tuesdays and Thursday I just do a little bit.”
After reaching his 350th senior game a fortnight ago against Huntly, and now with the club milestone also in the bag, this weekend's game against North Bendigo will bring up one final milestone for Pollock.
His last game in Leitchville-Gunbower colours.
“Next week is my last game of footy, I'll hang up the boots,” he said.
“My eldest son is starting to play under 12 footy, and I'll start following that journey.
“I'll still be involved at the club, but I've made my mind up to finish.”
Looking back on his career, Pollock said he couldn't be happier with how things panned out.
“My main thing was to win a premiership with Leitchy, and we got a couple of them,” he said.
“I've achieved what I've wanted to, and done what I can do and put my best foot forward for the footy club.”
